Proving, or proofing, is the crucial fermentation step where yeast consumes sugars in the dough, producing carbon dioxide gas. This gas gets trapped in the gluten network, causing the dough to rise. The time this takes depends heavily on three factors: temperature, yeast activity, and dough hydration. Warmer environments speed up yeast activity, while a colder prove (like in a fridge) slows it down, which can develop more complex flavours in your final loaf.
This Calculator Site tool helps you predict these times, but visual cues are just as important. A perfectly proved dough will look puffy and feel full of air, roughly doubling in size. For more precise cooking conversions, you might find our Oven Temperature Converter useful.
Pro Tip: The Poke Test
Not sure if your dough is ready? Gently press a floured finger about half an inch into the side. If the indentation springs back immediately, it needs more time. If it springs back slowly and only partially, it is perfectly proved and ready to bake. If the indentation doesn't spring back at all, it may be over-proved.

These numbers are a guide. Higher hydration doughs often prove faster, while enriched doughs (with milk, eggs, or sugar) can take longer. For other kitchen calculations, check out our Cooking Conversion Calculator.
How to use this Calculator Site tool
Simply enter your current room temperature, the type of yeast you're using (Instant, Active Dry, or Sourdough), and your dough's hydration percentage. The calculator will provide an estimated time for the first and second rise, plus an option for a long, flavour-enhancing cold prove in the fridge.
