The Science of the Rise

Proving, or proofing, is the crucial fermentation step where yeast consumes sugars in the dough, producing carbon dioxide gas. This gas gets trapped in the gluten network, causing the dough to rise. The time this takes depends heavily on three factors: temperature, yeast activity, and dough hydration. Warmer environments speed up yeast activity, while a colder prove (like in a fridge) slows it down, which can develop more complex flavours in your final loaf.

Pro Tip: The Poke Test

Not sure if your dough is ready? Gently press a floured finger about half an inch into the side. If the indentation springs back immediately, it needs more time. If it springs back slowly and only partially, it is perfectly proved and ready to bake. If the indentation doesn't spring back at all, it may be over-proved.
