US Cup vs Metric Cup vs Imperial Cup
There are actually three different "cup" sizes in use around the world. The US cup (236 ml) is the most common in recipes and is what this calculator uses. The metric cup (250 ml), used in Australia and New Zealand, is slightly larger. The old Imperial cup (284 ml), once used in the UK, is now largely obsolete. When a recipe just says "cups" without specifying, it almost always means US cups.
If you are using cups rather than scales, technique matters. For dry ingredients like flour, spoon the ingredient into the cup and level it off with a knife. Scooping directly from the bag compresses the flour and can add up to 20% extra weight. For brown sugar, pack it firmly into the cup. For liquids, place the cup on a flat surface and read at eye level.
